 Meat is firm and fleshy; pinkish in color, but whitens when cooked. Excellent smoked. Also valued for roe, which when salted is best known as caviar. Has large, grey eggs, generally measure between 2 and 2.5 mm. Contains 94 kcal in 100 g edible weight.
